Die Käserei

The Vincent Counasse cheese dairy began its activities in 2002 and is located in Chauveheid, in the municipality of Stoumont, near the farm of Philippe Counasse, his brother, in the Lienne Valley.

The dairy processes organic cow’s milk from Philippe’s farm and, since 2014, also organic goat’s milk from the farm of Marc Vanguestaine in Fagnoulin, in the municipality of Ferrières.

The flavour of the cheeses is closely linked to the richness of the organic flora of the pastures of the High Ardennes, as well as to the specific qualities of the Montbéliarde cows at Philippe’s farm, which are renowned for the quality of their milk.
