Matured Chevron
The ageing of our fresh goat’s cheeses allows them to develop character and brings out the flavours of our local terroir.
Initially mild and fresh, the cheese gradually develops a white and/or blue mould. The rind slowly forms and then becomes wrinkled, while the paste becomes more crumbly.
As it matures, the cheese loses volume and weight, while its flavour becomes stronger and more complex, revealing delicate notes of walnut and hazelnut.
